🛒 Ingredients

4 servings

4
  • 2.2 lbs (1 kg) beef short ribs, trimmed
  • 3.5 oz (100 g) smoked bacon, diced
  • 6 large yellow onions, sliced into rings
  • 1 tsp chili flakes or cayenne pepper
  • Salt to taste
  • 1 bay leaf

Directions

  1. 1

Season the beef ribs lightly with salt and set aside for 10 minutes.

  2. 2

Peel the onions and slice them into thick rings.

  3. 3

Cover the bottom of the pressure cooker with half the onion slices and the bay leaf.

  4. 4

Place the seasoned ribs on top, then scatter the diced bacon evenly over the meat.

  5. 5

Cover everything with the remaining onion slices and seal the pressure cooker lid tightly.

  6. 6

Cook over medium heat for 45 minutes — do not add water, the onions and meat release plenty of liquid on their own.

  7. 7

Allow pressure to release naturally, open carefully, and serve with the rich cooking juices.

💡 Chef's Tip

For even richer flavor, let the sealed pressure cooker rest off the heat for 10 minutes before opening. Serve with creamy mashed potatoes or steamed white rice.
