Tender, fall-off-the-bone pork ribs layered with juicy Tuscan sausage — all cooked in a pressure cooker with zero added water or oil. The natural juices do all the work, creating an incredibly flavorful one-pot meal the whole family will love.

🛒 Ingredients

8 servings

8
  • 1.5 kg (3.3 lb) pork spare ribs
  • 800 g (1.75 lb) Tuscan sausage or Italian-style pork sausage
  • 1 large yellow onion, sliced into rings
  • Salt and freshly ground black pepper to taste

Directions

  1. 1

Spread the onion rings evenly across the bottom of the pressure cooker — they act as a natural rack and add flavor.

  2. 2

Cut the ribs into individual pieces and layer half of them bone-side down over the onions.

  3. 3

Pierce the sausages all over with a fork, then place half of them on top of the ribs.

  4. 4

Repeat the layers: remaining ribs followed by the rest of the pierced sausages.

  5. 5

Seal the pressure cooker and cook over medium-high heat for 40 to 45 minutes from the moment the valve starts hissing.

  6. 6

Turn off the heat and allow the pressure to release naturally. Open carefully and serve immediately.

💡 Chef's Tip

Do not add any water or oil — the fat and juices from the sausage and ribs are more than enough to create a beautifully moist, self-basting cook. The longer you leave the pressure to drop naturally, the more tender the meat will be.
