🛒 Ingredients

6 servings

6
  • 2 kg (4.4 lb) pork ribs
  • 4 garlic cloves
  • 1 tbsp ground black pepper
  • 1 tbsp olive oil
  • 3 bay leaves
  • 2 sprigs fresh rosemary
  • 2 tbsp salt
  • 8 tbsp barbecue sauce

Directions

  1. 1

Crush garlic cloves with salt to form a rough paste and rub it all over the ribs.

  2. 2

Add black pepper, rosemary, bay leaves and olive oil, massaging the meat to coat evenly.

  3. 3

Seal the seasoned ribs in a zip-lock bag or covered dish and refrigerate for at least 12 hours.

  4. 4

Transfer the ribs and any marinade juices to a roasting pan.

  5. 5

Cover tightly with aluminum foil and roast at 350 °F (180 °C) for 1 hour 30 minutes.

  6. 6

Remove the foil, brush generously with barbecue sauce and continue roasting for another 1 hour 30 minutes at 350 °F, basting every 15 minutes until caramelized and glossy.

💡 Chef's Tip

For extra-tender ribs, extend the marinade to 24 hours. Finish under the broiler for 2–3 minutes for a perfectly lacquered crust.
