🛒 Ingredients

4 servings

4
  • 1 kg thick-cut pork chops (about 2 cm thick)
  • 1 large onion, finely chopped
  • 8 garlic cloves, crushed
  • 500 ml concentrated passion fruit juice
  • 1 jar Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • 100 g fresh apricots, halved
  • 50 ml dry white wine (such as Chardonnay)

Directions

  1. 1

In a large bowl, combine the chopped onion, crushed garlic, concentrated passion fruit juice, Dijon mustard, dry white wine, salt and pepper. Stir vigorously until you have a smooth, well-combined marinade.

  2. 2

Submerge the pork chops in the marinade, ensuring they are fully coated on all sides. Cover and refrigerate for 30 to 40 minutes.

  3. 3

Preheat the oven to 190 °C (375 °F). Arrange the pork chops side by side in a baking dish, pour the remaining marinade over them, and scatter the fresh apricot halves around the meat. Seal tightly with aluminum foil.

  4. 4

Bake covered for 30 minutes, then remove the foil. Continue roasting for an additional hour, turning the chops every 15 minutes to achieve an even golden crust on both sides.

  5. 5

Serve piping hot, garnished with freshly chopped chives and flat-leaf parsley. Pair with simple white rice decorated with a few parsley leaves for a complete and satisfying meal.

💡 Chef's Tip

For a richer marinade, stir in a tablespoon of acacia honey to balance the acidity of the passion fruit. If fresh apricots are unavailable, dried apricots work beautifully — simply soak them in warm water for 15 minutes before adding.
