Creamy Chicken Risotto

- 1 1/2 cups arborio rice
- 14 oz free-range chicken, diced
- 4 1/4 cups hot chicken broth
- 1 white onion, finely minced
- 2 cloves garlic, minced
- 2/3 cup dry white wine
- 3.5 oz grated Parmesan cheese
- 3.5 tbsp butter
- scant 1/2 cup sour cream or crème fraîche
- 3 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley, chopped (optional)

Heat the olive oil in a large skillet. Add the diced chicken and cook until golden brown. Set aside.

In the same skillet, add the minced onion and garlic. Sauté for 2-3 minutes until translucent.

Add the arborio rice and stir constantly for 2 minutes to toast the grains.

Deglaze with the white wine and let it evaporate completely.

Add the hot broth one ladle at a time, waiting for each ladle to be absorbed before adding the next. Continue for 18-20 minutes.

When the rice is al dente, add the reserved chicken, butter, sour cream or crème fraîche, and Parmesan. Stir gently.
