  • 1 1/2 cups arborio rice
  • 14 oz free-range chicken, diced
  • 4 1/4 cups hot chicken broth
  • 1 white onion, finely minced
  • 2 cloves garlic, minced
  • 2/3 cup dry white wine
  • 3.5 oz grated Parmesan cheese
  • 3.5 tbsp butter
  • scant 1/2 cup sour cream or crème fraîche
  • 3 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional)

Directions

    Heat the olive oil in a large skillet. Add the diced chicken and cook until golden brown. Set aside.

    In the same skillet, add the minced onion and garlic. Sauté for 2-3 minutes until translucent.

    Add the arborio rice and stir constantly for 2 minutes to toast the grains.

    Deglaze with the white wine and let it evaporate completely.

    Add the hot broth one ladle at a time, waiting for each ladle to be absorbed before adding the next. Continue for 18-20 minutes.

    When the rice is al dente, add the reserved chicken, butter, sour cream or crème fraîche, and Parmesan. Stir gently.

    Season with salt and black pepper. Garnish with fresh parsley if desired.

💡 Chef's Tip

For a perfect risotto, use hot broth to ensure even cooking of the rice. Stir regularly without being too aggressive with the rice grains. The risotto should have a creamy texture, never sticky.
