A delicious and very easy-to-prepare dish where shrimp are simmered in a creamy pink sauce scented with bell pepper, tomato, and fresh herbs. This shrimp and rice dish is a complete, light, and flavorful meal, rich in protein and healthy.

- 14 oz peeled shrimp
- 1 1/2 cups white or basmati rice
- 2 1/2 cups vegetable broth
- 3/4 cup sour cream or crème fraîche
- 2 medium tomatoes
- 1 red bell pepper

- Fresh parsley, chives, and cilantro
- Salt and pepper
- Olive oil
