  • 9 oz fusilli pasta
  • 7 oz medium shrimp, peeled and deveined
  • 1/2 fresh pineapple, diced
  • 1 small Persian cucumber, diced
  • 10 cherry tomatoes, halved
  • 3.5 oz gorgonzola cheese, cubed
  • 1/4 red onion, thinly sliced
  • 8 black olives, pitted and chopped
  • 2 tbsp extra virgin olive oil
  • Juice of 1 fresh lemon
  • Salt and freshly ground black pepper to taste
  • 2 handfuls fresh cilantro, chopped
  • 3.5 oz plain yogurt or sour cream/crème fraîche
  • 1 clove garlic, finely minced
  • 2 tbsp toasted sesame seeds

Directions

    Bring a pot of salted water to a boil and cook the fusilli pasta according to package directions until al dente. Drain and set aside in a large salad bowl.

    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the shrimp, season with salt and pepper. Cook for 2 to 3 minutes on each side until pink and opaque. Let cool slightly.

    Prepare the sauce by pouring the yogurt or sour cream into a bowl. Add the lemon juice, 1 tablespoon of olive oil, garlic, and salt and pepper to taste. Whisk until smooth and creamy.

    In the bowl with the pasta, add the pineapple, cucumber, cherry tomatoes, gorgonzola, red onion, and black olives.

    Pour the creamy sauce over the mixture and toss gently with a wooden spoon to coat all ingredients evenly.

    Arrange the cooked shrimp on top of the salad, sprinkle generously with fresh cilantro, and garnish with the toasted sesame seeds.

💡 Chef's Tip

For an even more elegant presentation, serve the salad in individual glasses or shallow bowls. If preparing this salad in advance, keep the sauce separate and add it just before serving to prevent the pasta from softening. Gorgonzola can be replaced with feta or blue cheese according to your preference.
