  • 2 cloves garlic
  • 1 1/4 cups heavy cream or crème fraîche
  • 3.5 oz grated cheese (Gruyère, Comté, or Emmental)
  • 1 tablespoon butter
  • Fresh thyme
  • Fresh parsley
  • Fresh chives
  • Salt and freshly ground black pepper
  • A pinch of nutmeg (optional)

Directions

    Preheat oven to 350°F (175°C).

    Peel the potatoes, then slice them into thin, even rounds using a mandoline or a sharp knife.

    Rub a gratin dish with a halved clove of garlic, then butter the bottom of the dish.

    Arrange the potato slices in layers in the dish.

    In a bowl, mix the heavy cream or crème fraîche, salt, pepper, nutmeg, chopped herbs, and the remaining crushed garlic.

    Pour this mixture over the potatoes, then sprinkle with grated cheese.

    Cover the dish with aluminum foil and bake for 40 minutes.
