Creamy Potato Gratin with Herbs and Cheese

- 2.2 lbs potatoes (preferably firm-fleshed)
- 2 cloves garlic
- 1 1/4 cups heavy cream or crème fraîche
- 3.5 oz grated cheese (Gruyère, Comté, or Emmental)
- 1 tablespoon butter
- Fresh thyme
- Fresh parsley
- Fresh chives
- Salt and freshly ground black pepper
- A pinch of nutmeg (optional)

Preheat oven to 350°F (175°C).

Peel the potatoes, then slice them into thin, even rounds using a mandoline or a sharp knife.

Rub a gratin dish with a halved clove of garlic, then butter the bottom of the dish.

Arrange the potato slices in layers in the dish.

In a bowl, mix the heavy cream or crème fraîche, salt, pepper, nutmeg, chopped herbs, and the remaining crushed garlic.
