  • 4 fresh eggs
  • 1 ripe avocado
  • 200g of cherry tomatoes
  • 2 tablespoons of thick crème fraîche
  • 1 tablespoon of soft butter
  • 1 tablespoon of extra virgin olive oil
  • 1 teaspoon of black sesame seeds
  • 4 sprigs of fresh chives
  • A handful of young shoots (rocket, spinach or mesclun)
  • 1 lemon (for detox water slices)
  • Flaky sea salt and freshly ground black pepper
  • 2 expressos (high-quality coffee)
  • 2 glasses of cold water

    Preheat the oven to 200°C (convection). Place the cherry tomatoes whole on a baking sheet, drizzle with olive oil, season with salt and pepper, and bake for 12-15 minutes until lightly caramelized and tender.

    Meanwhile, crack the eggs into a bowl, add crème fraîche, a pinch of salt, and a turn of black pepper. Gently whisk with a fork without overmixing — some streaks of white are acceptable for a creamy texture.
