- 2 cloves garlic, minced
- 1 Lemon
- 2 tablespoons Olive oil
- Salt, to taste
- Black pepper, to taste
- 1 handful Fresh parsley
- 1 pinch Sweet paprika
- 2 large Sweet potatoes
- 1 tablespoon Butter
- 1/4 cup Milk
- Nutmeg, to taste
- 1 Carrot
- 1 Zucchini
- 1/2 Red bell pepper
- 1/2 Red onion
- 1 teaspoon Herbs de Provence

Rinse the sea bream, pat dry thoroughly, and make light incisions on the sides. Rub with garlic, lemon juice, olive oil, salt, pepper, and spices. Let marinate for 20-30 minutes.

Grill in the oven at 392°F or on a pan/grill for 20-25 minutes, turning halfway through until golden brown.

Arrange the vegetables on a baking sheet, drizzle with olive oil, season, and roast at 392°F for 25-30 minutes.

Cook the sweet potato pieces in salted water until tender. Drain and mash with butter and a little milk until creamy. Season with salt, pepper, and nutmeg.

Serve the whole fish on a plate with a bed of roasted vegetables, a generous portion of puree, a lemon slice, and a sprig of fresh parsley.

Choose a fresh whole fish for best presentation. You can prepare the marinade in advance. The vegetables and puree can be prepared in parallel while the fish cooks.
