🛒 Ingredients

5 servings

5
  • 500 ml whole milk
  • 4 egg yolks
  • 75 g granulated sugar

Directions

  1. 1

Warm the milk in a saucepan over medium heat until it just begins to steam and small bubbles appear around the edges — remove from heat before it comes to a full boil.

  2. 2

In a mixing bowl, whisk together the egg yolks and sugar for about 2 minutes until the mixture turns pale yellow and slightly fluffy.

  3. 3

Slowly pour the hot milk into the egg mixture in a thin, steady stream, whisking constantly to prevent the eggs from curdling.

  4. 4

Return the combined mixture to the saucepan and cook over low heat for 8 to 10 minutes, stirring continuously with a wooden spoon, until the sauce thickens enough to coat the back of the spoon.

  5. 5

Remove from heat and keep stirring for another minute to stop the cooking process and ensure a smooth, even texture.

  6. 6

Serve warm immediately or allow to cool completely before refrigerating and serving cold.

💡 Chef's Tip

To check doneness, run your finger across the coated spoon — the line should hold its shape cleanly. Infuse the milk with a vanilla bean or a strip of lemon zest while heating for extra depth of flavour.
