🛒 Ingredients

1 servings

1
  • 14 oz (395 g) sweetened condensed milk
  • 1 cup (250 ml) whole milk
  • 2 egg yolks
  • 2 tablespoons cornstarch
  • ¾ cup (180 ml) heavy whipping cream

Directions

  1. 1

In a medium saucepan, whisk together the sweetened condensed milk, whole milk, cornstarch, and egg yolks until completely smooth with no lumps.

  2. 2

Cook over medium heat, stirring constantly with a heatproof spatula or whisk, for 8–10 minutes until the mixture thickens into a dense, glossy cream.

  3. 3

Remove from heat immediately once thickened. Stir in the heavy cream off the heat until fully combined and silky.

  4. 4

Allow the cream to cool for a few minutes before piping into doughnuts or éclairs. For cake filling, refrigerate for 30 minutes to firm up slightly.

💡 Chef's Tip

For extra depth of flavor, whisk in 1 teaspoon of pure vanilla extract with the heavy cream at the end. This cream also freezes well — store in an airtight container for up to one month.
