  • 1 litre (4 cups) whole milk
  • 1 can (14 oz / 395 g) sweetened condensed milk
  • 3 egg yolks
  • 4 tablespoons cornstarch
  • 3 egg whites
  • 12 tablespoons granulated sugar
  • 1 cup (200 g) cold heavy cream

Directions

  1. 1

In a medium saucepan, whisk together the milk, condensed milk, egg yolks, and cornstarch until completely smooth and lump-free.

  2. 2

Cook over medium heat, stirring constantly with a wooden spoon or silicone spatula, until the custard thickens and coats the back of the spoon. Remove from heat and allow to cool completely.

  3. 3

In a clean, dry bowl, beat the egg whites to stiff peaks. Gradually add the sugar while continuing to beat until a glossy, firm meringue forms.

  4. 4

Gently fold the cold heavy cream into the meringue using a spatula, keeping as much air in the mixture as possible.

  5. 5

Carefully fold the airy meringue mixture into the fully cooled custard using gentle bottom-to-top motions. Refrigerate until ready to fill your cake.

💡 Chef's Tip

The cooled custard must be completely cold before folding in the meringue — even a little warmth will deflate the whites and ruin the light texture. For extra stability, chill your mixing bowl in the freezer before whipping.
