🛒 Ingredients

4 servings

4
  • 1 egg
  • 1 cup milk
  • 8 tbsp all-purpose flour
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • Salt to taste
  • 300 g (10 oz) ground beef
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 1 beef bouillon cube
  • 1 tomato, diced
  • Dried oregano and fresh parsley to taste
  • Mozzarella slices, as needed
  • Tomato sauce
  • Grated Parmesan cheese, for topping

Directions

  1. 1

Make the filling: heat olive oil in a skillet and sauté minced garlic until fragrant. Add ground beef and cook until well browned.

  2. 2

Stir in diced tomato, crumbled bouillon cube, and oregano. Cook over medium heat until the mixture is dry and well combined.

  3. 3

Remove from heat, mix in fresh parsley, and set aside.

  4. 4

Make the batter: blend the egg, milk, flour, olive oil, Parmesan, and salt until completely smooth.

  5. 5

Cook thin crêpes in a non-stick pan — no extra oil needed, as the batter already contains olive oil.

  6. 6

Place a slice of mozzarella and a spoonful of beef filling on each crêpe, then roll them up tightly.

  7. 7

Arrange rolled crêpes in a baking dish, spoon tomato sauce generously over the top, and sprinkle with Parmesan.

  8. 8

Serve immediately while hot. This recipe yields approximately 8 crêpes.

💡 Chef's Tip

For a golden, bubbly cheese topping, place the dish under the broiler for 5 minutes before serving. Grated carrots or green peas can be folded into the filling for added texture and nutrition.
