Directions
- 1
Blend the milk, eggs, spinach, and salt until smooth and green. Add the flour and blend again until you have a lump-free batter. Add a splash more milk if the batter is too thick.
- 2
Heat a lightly oiled non-stick pan over medium heat. Pour in one ladle of batter and quickly spread it thin. Cook 1–2 minutes per side until set. Stack crêpes under a clean cloth.
- 3
In a skillet, heat the oil and sauté the onion until soft. Add the garlic and cook for 1 minute.
- 4
Add the ground beef, diced tomatoes, and crumbled bouillon cube. Cook over high heat, stirring often, until the beef is browned and the mixture is dry. Season and stir in the parsley off the heat.
- 5
Place two spoonfuls of filling onto each crêpe and roll up tightly. Serve right away or warm in a 180 °C oven for 10 minutes.
💡 Chef's Tip
Let the batter rest for 15 minutes before cooking for lighter crêpes. For a richer version, top the rolled crêpes with béchamel sauce and bake until golden and bubbling.
