  • 400 g cooked frozen shrimp, thawed
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion, finely chopped
  • 2 ripe tomatoes, diced
  • 1/2 green bell pepper, finely diced
  • 4 garlic cloves, minced
  • 1 tbsp fresh flat-leaf parsley, chopped
  • 1 tbsp cornstarch
  • 200 ml tomato purée
  • 200 ml water
  • Lemon juice, to taste
  • Salt, to taste

Directions

    Thaw the shrimp and marinate with lemon juice, a pinch of salt, and minced garlic for at least 1 hour in a covered bowl.

    Heat olive oil and butter in a large skillet over medium heat. Sauté the onion and garlic until lightly golden and fragrant.

    Add the marinated shrimp and cook for 5 minutes, covered, over low heat to keep them tender.

    Stir in the diced tomatoes, bell pepper, tomato purée, water, and cornstarch. Mix gently to combine.

    Simmer for another 5 minutes over low heat until the sauce thickens and coats the shrimp.

    Garnish with fresh parsley and serve immediately with steamed rice or crusty bread.

💡 Chef's Tip

For extra depth of flavor, deglaze the pan with a splash of dry white wine before adding the tomato purée.
