Cri Cri (Sugar-Coated Peanuts)
Some treats taste like childhood, and cri cri is one of them. These crunchy peanuts wrapped in a thin shell of crystallized sugar need almost nothing but a little patience. Perfect with coffee, or spooned into a jar to give away.
🛒 Ingredients
15 servings
- 500 g raw shelled peanuts (unsalted)
- 1 1/2 cups sugar (about 300 g)
- Water, for soaking and cooking
- 1 pinch fine salt

Directions
- 1
Soak the peanuts in a bowl of warm water for about 15 minutes.
- 2
Drain them, tip them into a saucepan and add just enough water to cover.
- 3
Set over high heat. As soon as the water is hot, add the sugar and stir.
- 4
Keep stirring constantly as the water evaporates and the sugar starts to coat each peanut.
- 5
When the sugar crystallises into a fine white shell and the peanuts come away from the pan, take it off the heat.
- 6
Add the salt (and the vanilla), spread out on a tray and let cool completely before breaking into pieces.
💡 Chef's Tip
The whole trick is to stay at the stove and keep stirring — that is what builds the even white coating. If the sugar starts clumping, lower the heat slightly. Store in an airtight jar for up to two weeks.
