  • 800 g chicken thighs and drumsticks
  • 2 tbsp olive oil
  • 1 tbsp white vinegar
  • 1 garlic clove, crushed or minced
  • 1/2 tsp fine salt
  • 1 tbsp curry powder
  • 1/2 tsp ground white pepper
  • 1 tbsp dried onion flakes
  • 180 ml warm water

Directions

    Heat the olive oil in a wide, deep pan over medium heat. Add the chicken pieces and brown on all sides for 5–7 minutes until golden.

    Add the dried onion flakes and minced garlic around the chicken. Stir and cook for 2 minutes until fragrant.

    Sprinkle the curry powder and white pepper evenly over the chicken, tossing well to coat each piece.

    Pour in the vinegar and warm water. Season with salt, cover the pan, and simmer over medium heat for 30 minutes, turning the chicken halfway through.

    Check for doneness — the meat should pull away from the bone easily and the sauce should be slightly thickened. Adjust seasoning and serve hot.
