Directions
- 1
Trim the bone tip of each chicken thigh, keeping only the meaty part for a neater presentation.
- 2
Combine grated garlic, grated onion, salt and black pepper in a bowl. Rub the mixture generously all over the chicken thighs.
- 3
Cover and marinate in the fridge for at least 2 hours — overnight gives the best flavour.
- 4
Wrap 2 thin bacon rashers around each thigh, overlapping slightly so they hold in place during cooking.
- 5
Peel 4 potatoes, cut into 1.5 cm cubes and parboil in salted water for 10 minutes. Drain and set aside.
- 6
Peel the 5th potato and slice it very thinly using a mandoline or sharp knife.
- 7
Drizzle olive oil in a medium baking dish and cover the base with the thin potato slices.
- 8
Arrange the bacon-wrapped thighs tightly on top of the potato layer, skin side up.
- 9
Tuck the parboiled potato cubes between the thighs and around the edges of the dish.
- 10
Spread the cream cheese generously over the top and sprinkle with shredded cheese.
- 11
Bake at 180 °C (350 °F) for approximately 1 hour 30 minutes until the chicken is golden and cooked through.
💡 Chef's Tip
For the most intense flavour, marinate the chicken overnight in the fridge. Try mixing fresh chives or thyme into the cream cheese before spreading — it adds a lovely herby note that pairs beautifully with the crispy bacon.
