  • 1 kg chicken thighs and drumsticks
  • 4 garlic cloves, minced
  • 2 tbsp Dijon mustard
  • 2 tbsp mayonnaise
  • 1 cup (150 g) fine breadcrumbs
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp olive oil
  • Salt and black pepper to taste

    Preheat your oven to 400°F (200°C). Pat the chicken pieces completely dry with paper towels, then season generously with salt, black pepper, and minced garlic on all sides.

    In a bowl, whisk together the Dijon mustard, mayonnaise, and olive oil until smooth. Coat each chicken piece thoroughly with this mixture, pressing it gently under the skin for extra flavor.

    On a flat plate, combine the breadcrumbs with dried thyme and rosemary. Dredge each coated chicken piece in the herb breadcrumbs, pressing firmly on all sides so the crust adheres well.
