  • 1 kg boneless chicken thighs
  • 4 garlic cloves, minced
  • Juice and zest of 1 lemon
  • Fresh or dried rosemary, to taste
  • Salt and black pepper, to taste
  • 200 g shredded mozzarella or cheddar
  • 200 g sliced cooked ham
  • 200 g smoked sausage, sliced
  • 2 tbsp Dijon mustard or mayonnaise
  • 1 tbsp olive oil

Directions

    Combine minced garlic, lemon juice, rosemary, salt, and pepper. Coat the chicken thighs evenly and marinate for at least 1 hour in the refrigerator.

    Lay each thigh flat on a clean surface. Layer with sliced ham, shredded cheese, and sausage slices, leaving a small border around the edges.

    Roll each thigh tightly and secure with toothpicks to keep the filling in place during cooking.

    Preheat oven to 220 °C (425 °F). Lightly grease a baking dish with olive oil.

    Place the rolls in the dish with toothpicks facing up. Brush generously with Dijon mustard or mayonnaise for a golden, flavorful crust.
