- Zest and juice of 1 fresh lemon

Using sharp kitchen shears, cut each wing at the joint to separate them into two pieces.

In a bowl, mix the minced garlic, lemon zest and juice, cumin seeds, and olive oil. Season generously with salt and pepper.

Pour the marinade over the chicken wings in a dish and toss well to coat all pieces. Cover and refrigerate for at least 1 hour, or overnight if possible.
