🛒 Ingredients

6 servings

6
  • 700 g (1.5 lb) rump steak or sirloin
  • Salt and freshly ground black pepper
  • 2 garlic cloves, minced
  • 2 tablespoons vegetable oil
  • 3 tablespoons butter
  • ½ cup (125 ml) whole milk
  • 250 g (9 oz) cream cheese or soft processed cheese
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • 50 g (2 oz) grated gruyère or parmesan
  • ¾ cup (200 ml) heavy cream
  • 1 beef bouillon cube

Directions

  1. 1

Slice the beef into thin strips. Season with salt, pepper and minced garlic. Let marinate for 10 minutes at room temperature.

  2. 2

Heat the oil in a large skillet over high heat. Sear the beef strips in batches until golden brown on all sides. Transfer to an oven-safe dish and set aside.

  3. 3

In a saucepan, melt the butter over medium heat. Crumble in the bouillon cube, then add the milk and cream cheese. Whisk continuously until the sauce is smooth and lump-free.

  4. 4

Bring to a gentle simmer, then stir in the cornstarch dissolved in cold water. Keep whisking for 2–3 minutes until the sauce thickens and coats the back of a spoon.

  5. 5

Remove from heat. Stir in the heavy cream and half the grated cheese. Mix well until the sauce is silky and velvety.

  6. 6

Pour the cheese sauce over the beef strips. Sprinkle with the remaining grated cheese and broil at 200 °C (400 °F) for 5–7 minutes until golden and bubbling.

💡 Chef's Tip

For a deeper flavour, swap part of the milk for homemade beef broth. Serve over steamed white rice or fresh egg noodles to soak up every drop of the delicious sauce.
