🛒 Ingredients

8 servings

8
  • 1 kg chicken breasts, cut into cubes
  • 2 shallots, finely chopped
  • 3 garlic cloves, minced
  • 250 g button mushrooms, sliced
  • 2 tablespoons olive oil
  • 150 ml dry white wine
  • 200 ml heavy cream
  • 1 tablespoon tomato paste
  • 1 chicken stock cube
  • Fresh tarragon to taste
  • Salt and black pepper

Directions

  1. 1

Cut chicken breasts into 2 cm cubes. Season generously with salt and pepper.

  2. 2

Heat olive oil in a large pan over medium heat. Sauté shallots and garlic until softened, about 3 minutes.

  3. 3

Add chicken pieces and cook until golden brown on all sides, about 5–7 minutes.

  4. 4

Add mushrooms and cook for 3 minutes, stirring occasionally.

  5. 5

Pour in white wine, scraping up any browned bits from the pan. Let it reduce by half.

  6. 6

Stir in tomato paste, crumbled stock cube and 100 ml warm water. Simmer on low heat for 10 minutes.

  7. 7

Remove from heat, stir in heavy cream and chopped tarragon. Adjust seasoning and serve with basmati rice or fresh pasta.

💡 Chef's Tip

For an extra-silky sauce, swirl in a knob of butter just before serving. Swap tarragon for flat-leaf parsley or chives if preferred.
