🛒 Ingredients

6 servings

6
  • 1 chicken breast, cut into strips
  • 4 potatoes, cut into cubes
  • 1/2 tomato, finely chopped
  • 1/2 onion, finely chopped
  • 1 chicken stock cube
  • 2 garlic cloves, crushed
  • Juice of 1/2 lemon
  • Salt to taste
  • 2 tablespoons vegetable oil

Directions

  1. 1

In a bowl, combine the chicken strips with lemon juice, crushed garlic, crumbled stock cube and salt. Cover and marinate for 5 minutes.

  2. 2

Heat the oil in a medium saucepan over medium heat. Sauté the onion and tomato for about 2 minutes until softened.

  3. 3

Add the marinated chicken and cook for 5 minutes, turning occasionally, until lightly browned on all sides.

  4. 4

Stir in the potato cubes and add enough water to reach halfway up the ingredients. Cover and simmer over low heat for 20–25 minutes until the potatoes are very tender.

  5. 5

Adjust seasoning and serve hot straight from the pan.

💡 Chef's Tip

Add a bay leaf during cooking for extra depth. This dish tastes even better the next day as the flavours meld together.
