Directions
- 1
Make the vanilla cream: in a saucepan over medium heat, whisk together the condensed milk, butter, milk, egg yolk, vanilla extract and cornstarch. Stir continuously until the mixture thickens and coats the back of a spoon. Remove from heat, fold in the heavy cream and set aside.
- 2
Make the strawberry jelly layer: dissolve the jelly powder in the hot water, stirring vigorously. Add the heavy cream and condensed milk, mixing until smooth. Set aside at room temperature.
- 3
Make the chocolate ganache: melt the dark chocolate in a bain-marie or microwave in 30-second bursts. Stir in the condensed milk, then the heavy cream, mixing until glossy and smooth.
- 4
Assemble in a large rectangular dish: spread the vanilla cream evenly on the bottom, then layer the ladyfinger biscuits on top.
- 5
Pour the strawberry jelly mixture over the biscuits, then add a second layer of ladyfingers.
- 6
Spread the chocolate ganache over the top, smoothing with a spatula.
- 7
Decorate with chocolate shavings and fresh strawberries. Refrigerate for at least 4 hours, or overnight, before serving chilled.
💡 Chef's Tip
For extra flavour, quickly dip the ladyfingers in a mix of milk and vanilla extract before layering. Leftovers keep well in the fridge for up to 3 days covered with cling film.
