Directions
- 1
Place beef cutlets between two sheets of plastic wrap and gently pound to an even thickness. In a bowl, combine the grated onion, garlic, paprika, oregano, salt, and pepper. Rub the mixture all over each cutlet and let marinate for 15 minutes.
- 2
Dip each marinated cutlet in the beaten egg yolks, then press firmly into the breadcrumbs until evenly coated on both sides. Set aside on a plate.
- 3
Heat a generous layer of oil in a large skillet over medium-high heat. Fry the breaded cutlets for 3–4 minutes per side until deep golden and crisp. Transfer to a paper-towel-lined plate to drain excess oil.
- 4
Preheat the oven to 200 °C / 390 °F (fan-forced). Arrange the fried cutlets in a large baking dish. Layer ham slices on top, then cover completely with mozzarella slices.
- 5
Spoon the tomato sauce evenly over the mozzarella layer to prevent it from burning. Bake for 10–12 minutes, until the cheese is fully melted and bubbling. Serve hot straight from the dish.
💡 Chef's Tip
Use a meat mallet to tenderize the cutlets before marinating for the best texture. For extra flavor, add a pinch of chili flakes to the tomato sauce. Leftovers reheat well in the oven at 180 °C for 8 minutes — they taste just as good the next day.
