🛒 Ingredients

6 servings

6
  • 1 package fettuccine, cooked al dente
  • 100 g (7 tbsp) unsalted butter
  • 1 onion, finely chopped
  • 3 garlic cloves, crushed
  • 250 g smoked chicken breast, cut into strips
  • 1 level tablespoon all-purpose flour
  • ½ cup (120 ml) warm milk
  • ¾ cup (200 ml) heavy cream
  • ½ cup grated parmesan
  • ½ cup fresh peas
  • Salt and freshly ground black pepper to taste
  • Extra grated parmesan for serving

Directions

  1. 1

Melt butter in a large skillet over low heat and gently sauté the onion and garlic until softened but not browned.

  2. 2

Add the smoked chicken strips and cook for 2–3 minutes, stirring occasionally.

  3. 3

Sprinkle in the flour and stir well to form a light roux, cooking for about 1 minute.

  4. 4

Gradually pour in the warm milk, stirring constantly to avoid any lumps.

  5. 5

Add the heavy cream and cook until it just begins to bubble, then remove from heat.

  6. 6

Stir in the grated parmesan and fresh peas until evenly combined.

  7. 7

Season generously with salt and freshly ground pepper.

  8. 8

Toss the fettuccine with the sauce and serve immediately, topped with extra parmesan.

💡 Chef's Tip

For an even richer sauce, use full-fat crème fraîche instead of heavy cream. Smoked turkey or sliced ham make excellent substitutes if smoked chicken is unavailable.
