Creamy Baked Fish Fillet Gratin

- 1 medium onion, finely sliced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 200 ml heavy cream
- 100 g cream cheese
- 50 g grated gruyère or cheddar
- Black pepper to taste
- 1 sprig fresh thyme

Preheat the oven to 180 °C (350 °F). Grease a baking dish with olive oil.

Season the fish fillets with salt, pepper and sliced onion. Dot the tops with small pieces of butter.

Bake for 20 minutes until the fish is just cooked through.

Meanwhile, warm the heavy cream in a small saucepan over low heat. Stir in the cream cheese until you get a smooth, silky sauce. Season with salt, pepper and thyme.
