  • 1 kg (2.2 lb) hake fillets (or cod)
  • 1 packet dry onion soup mix
  • 200 ml (¾ cup) heavy cream
  • 80 g (3 oz) grated parmesan
  • 200 g (7 oz) shredded mozzarella
  • Freshly ground black pepper

Directions

    Preheat the oven to 180 °C (350 °F). Lightly grease a large baking dish.

    Arrange the hake fillets in a single layer in the dish without overlapping.

    Sprinkle the dry onion soup mix evenly over the fillets.

    Pour the heavy cream over the top, spreading it evenly across all the fish.

    Cover tightly with aluminium foil and bake for 20–25 minutes until the fish is tender and cooked through.

    Remove the foil and scatter the mozzarella and parmesan generously over the fish.

    Return to the oven uncovered for another 10 minutes until the cheese is melted and golden.

    Rest for 2 minutes before serving with white rice, mashed potatoes, or steamed vegetables.

💡 Chef's Tip

Scatter fresh thyme or chopped parsley over the fish before covering with foil for extra aroma. Gruyère or cheddar work equally well if mozzarella is unavailable.
