🛒 Ingredients

4 servings

4
  • 500 g (1.1 lb) chicken breast fillets
  • Juice of 1 lemon
  • 2 garlic cloves, crushed
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • 3 tablespoons mayonnaise
  • 60 g (2 oz) grated cheese (cheddar or mozzarella)
  • 2 teaspoons unsalted butter

Directions

  1. 1

Combine lemon juice with crushed garlic, curry powder, salt and pepper. Coat the chicken fillets thoroughly with this marinade and refrigerate for at least 30 minutes.

  2. 2

Preheat your oven to 180 °C (350 °F). Lightly grease a baking dish and arrange the marinated fillets in a single layer.

  3. 3

Spread a thin layer of mayonnaise over each fillet. Sprinkle generously with grated cheese and dot small pieces of butter between the fillets.

  4. 4

Bake for 25–30 minutes, until the cheese is golden and the chicken is cooked through. Serve hot with a green salad or steamed rice.

💡 Chef's Tip

Add a pinch of smoked paprika to the marinade for extra depth. Sour cream or crème fraîche can replace the mayonnaise for a lighter result.
