🛒 Ingredients

4 servings

4
  • 2 chicken breast fillets
  • 1 lemon
  • 1 teaspoon curry powder
  • 3 garlic cloves
  • 1 tablespoon unsalted butter, softened
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper

Directions

  1. 1

Preheat the oven to 180 °C (350 °F). Pat the chicken breasts dry with paper towels.

  2. 2

Crush the garlic cloves into a smooth paste and blend with the softened butter, salt, and pepper.

  3. 3

Score the fillets with shallow cuts, squeeze fresh lemon juice over them, and let rest for 10 minutes.

  4. 4

Spread the garlic butter paste generously over both sides of the fillets and dust evenly with curry powder.

  5. 5

Place in a lightly oiled baking dish and roast for 30 minutes, turning halfway through, until golden and cooked through.

  6. 6

Rest for 5 minutes before slicing. Serve with basmati rice and a crisp green salad.

💡 Chef's Tip

For extra tender chicken, marinate the fillets in the fridge for 1 hour before roasting. A pinch of smoked paprika adds a beautiful deep-golden color.
