  • 1 kg tilapia fillets
  • Juice of half a lemon
  • 4 tomatoes, sliced into rounds
  • 4 onions, sliced into rounds
  • 1/2 cup chopped black olives
  • 500 g cooked potatoes
  • 1 tablespoon butter
  • 1/2 cup heavy cream
  • 300 g shredded mozzarella
  • Olive oil
  • Salt

Directions

    Season the tilapia fillets with lemon juice and salt. Set aside for 10 minutes.

    In a baking dish, arrange a layer of onion rounds followed by a layer of tomato slices.

    Place the seasoned fish fillets on top of the vegetables.

    Cover with another layer of onions and tomatoes, then scatter the chopped olives over everything. Drizzle generously with olive oil.

    Bake in a hot oven (200 °C / 400 °F) for 15 minutes. Remove and set aside.

    In a bowl, mash the cooked potatoes until smooth.

    In a saucepan, melt the butter, add the mashed potatoes and heavy cream. Stir over low heat until creamy and well combined. Season with salt.

Add a pinch of nutmeg to the mash for extra depth of flavor. Swap mozzarella for cheddar or gruyère for a bolder taste.
