🛒 Ingredients

10 servings

10
  • 1 can sweetened condensed milk (14 oz / 395 g)
  • 1¾ cups whole milk (same volume as the condensed milk can)
  • 3 large eggs
  • 2 cups granulated sugar (for caramel)
  • ½ cup boiling water

Directions

  1. 1

Pour the sugar into a heavy-bottomed saucepan and heat over medium heat without stirring until it melts into a deep golden caramel.

  2. 2

Carefully pour in the boiling water and stir until a smooth caramel syrup forms. Pour it immediately into the bottom of a round mold.

  3. 3

In a blender, combine the condensed milk, whole milk, and eggs. Blend for 3 minutes until completely smooth and homogeneous.

  4. 4

Pour the custard mixture over the caramel in the mold and cover tightly with aluminum foil.

  5. 5

Fill a large pot with about 1 inch of water and set the mold inside.

  6. 6

Cover the pot and cook over very low heat for 40 minutes. Check doneness by inserting a knife — it should come out clean.

  7. 7

Cool to room temperature, then refrigerate for at least 1 hour before unmolding and serving.

💡 Chef's Tip

Keep the heat extremely low throughout cooking — a gentle steam (not a rolling boil) is the secret to a perfectly smooth, bubble-free texture.
