No-Bake Condensed Milk Flan

ML
By Marie Lefebvre · Updated October 16, 2026

A silky Brazilian-style flan that never sees the oven — the blender does the work and the fridge does the rest. The amber caramel lid makes it look like a dessert you slaved over, when really you just waited overnight. The hardest part is not sneaking a spoonful before it sets.

🛒 Ingredients

10 servings

10
  • 2 cans sweetened condensed milk (2 × 14 oz / 397 g)
  • 2 cartons heavy cream (2 × 7 oz / 200 ml)
  • 1 cup whole milk (250 ml)
  • 1 packet unflavored powdered gelatin (about 12 g)
  • 2 tbsp sugar, for the caramel

Directions

  1. 1

Warm the milk, pour it over the powdered gelatin and stir until it is completely dissolved and lump-free.

  2. 2

Add the condensed milk, the heavy cream and the gelatin-milk to a blender and blend for 2 to 3 minutes, until the mixture is perfectly smooth.

  3. 3

Melt the sugar in a ring mould over low heat, swirling until it turns a deep amber, then tilt the mould so the caramel coats the base and the sides.

  4. 4

Pour the blended mixture over the caramel, let it cool down, then refrigerate overnight — at least 6 hours.

  5. 5

Dip the mould briefly in warm water, invert it onto a glass dish and serve straight away. Enjoy!

💡 Chef's Tip

Never let the milk boil when you dissolve the gelatin: once it is too hot, it loses its setting power and the flan stays liquid. For an effortless unmoulding, make the caramel the day before in a lightly buttered mould — it will release in one clean motion.
