🛒 Ingredients

8 servings

8
  • 1 can (14 oz / 395 g) sweetened condensed milk
  • 1¾ cups (395 ml) whole milk
  • 3 large eggs
  • 1 cup (200 g) granulated sugar
  • ½ cup (120 ml) water

Directions

  1. 1

Preheat oven to 350 °F (180 °C). Bring a kettle of water to a boil for the water bath.

  2. 2

Melt the sugar in a heavy saucepan over medium heat without stirring until it turns a deep amber. Carefully pour in the water, swirl to combine, and simmer 1 minute until smooth. Immediately pour into a 9-inch round cake pan, tilting to coat the base evenly.

  3. 3

Blend the eggs for 30 seconds, then add the condensed milk and whole milk. Blend on medium speed for 1 minute until fully combined.

  4. 4

Strain the mixture through a fine-mesh sieve directly over the caramel to remove air bubbles.

  5. 5

Set the pan inside a larger roasting dish and fill with hot water until it reaches halfway up the sides of the flan pan. Bake for 45 minutes, until the edges are set and the center has a slight jiggle.

  6. 6

Cool to room temperature, then refrigerate for a minimum of 2 hours. Run a thin knife around the edge and invert onto a deep serving plate.

💡 Chef's Tip

Straining the custard is the key to that ultra-smooth texture. For extra depth, let the caramel go just past golden — a slightly darker caramel balances the sweetness of the condensed milk beautifully.
