8
  • 1 can (14 oz / 395 g) sweetened condensed milk
  • 2½ cups (625 ml) whole milk
  • 5 large eggs
  • 1 cup (150 g) crumbled paçoca (Brazilian peanut candy)
  • 1 cup (200 g) granulated sugar
  • ½ cup (125 ml) water

Directions

  1. 1

Preheat the oven to 350 °F (180 °C) and prepare a large roasting pan for a water bath.

  2. 2

Combine sugar and water in a saucepan over low heat without stirring until a golden caramel forms. Pour immediately into a 9-inch (24 cm) tube pan and set aside.

  3. 3

Blend the condensed milk, whole milk, and eggs for 2 minutes until smooth and airy.

  4. 4

Fold the crumbled paçoca into the blended mixture with a spoon, then gently pour into the caramel-lined pan.

  5. 5

Set the pan inside the roasting dish, fill with hot water to halfway up the sides, and bake 40 minutes until just set.

  6. 6

Cool to room temperature, refrigerate at least 3 hours, then invert onto a serving plate and serve chilled.

💡 Chef's Tip

Can't find paçoca? Pulse 1 cup of unsalted roasted peanuts with 2 tablespoons of brown sugar in a food processor until crumbly — it's a great substitute.
