🛒 Ingredients

  • 3 large eggs
  • 16 tablespoons milk powder
  • 10 tablespoons sugar
  • 4 cups water
  • 2 cups sugar (for caramel)
  • 1 cup water (for caramel)

Directions

  1. 1

Add the eggs, milk powder, sugar, and water to a blender. Blend on high until the mixture is completely smooth and uniform. Set aside.

  2. 2

In a heavy-bottomed saucepan, combine the 2 cups of sugar with 1 cup of water. Cook over medium heat without stirring.

  3. 3

Let the mixture cook undisturbed until it reaches a deep amber caramel color. Remove from heat immediately to prevent burning.

  4. 4

Pour the hot caramel into a flan mold, tilting it quickly to coat the bottom and sides evenly before it sets.

  5. 5

Gently pour the blended mixture over the caramel. Bake in a water bath at 180 °C (350 °F) for 45–55 minutes, until the top is lightly golden and the center is set.

  6. 6

Allow to cool to room temperature, then refrigerate for a minimum of 2 hours. Run a knife along the edges before inverting onto a serving plate.

💡 Chef's Tip

Never stir the caramel while it cooks — swirl the pan gently only if needed. For a microwave version, use a suitable mold and cook in 3-minute bursts, checking the texture between each interval.
