🛒 Ingredients

6 servings

6
  • 1 kg fresh whole beef liver
  • Juice of 2 lemons
  • 1 can of tomato sauce
  • 2 large tomatoes, diced
  • 1 large onion, finely chopped
  • 1 small bell pepper, finely chopped
  • Fresh parsley to taste
  • Seasonings to taste
  • Salt
  • 1 beef bouillon cube
  • 3 garlic cloves, crushed
  • Olive oil
  • 3 tablespoons butter

Directions

  1. 1

Remove all membranes from the liver. Soak it in lemon juice for 15 minutes to tenderize and mellow its flavour.

  2. 2

Do not rinse with water or vinegar — either will toughen the liver significantly.

  3. 3

Cut into roughly 3 cm cubes. In a bowl, combine the liver with tomatoes, onion, bell pepper, garlic, parsley, seasonings and salt. Do not add olive oil, butter or bouillon yet.

  4. 4

Let the liver marinate for about 40 minutes so it absorbs all the flavours.

  5. 5

Heat olive oil in a wide pan over medium heat. Add the marinated mixture and sauté, stirring often. Add butter, bouillon cube and tomato sauce. If the sauce becomes too thick, add a drizzle more olive oil.

  6. 6

Do not add water — let the sauce reduce naturally for a concentrated flavour.

  7. 7

Taste and adjust salt as needed.

  8. 8

Cook to your liking: medium (about 7 minutes) for a rosy, tender centre, or well done (about 10 minutes) for firmer texture.

💡 Chef's Tip

The lemon soak is non-negotiable for tender liver — skip the water rinse entirely. Serve over white rice or creamy mashed potatoes to soak up every drop of sauce.
