🛒 Ingredients

4 servings

4
  • 300 g beef tenderloin, cut into cubes, per person
  • 1 bottle dry red wine
  • 2 garlic cloves, minced
  • 1 onion, sliced
  • 2 beef bouillon cubes
  • Salt to taste
  • 1 drizzle of olive oil
  • Crusty bread and dipping sauces to serve

Directions

  1. 1

Cut the beef tenderloin into even 2 cm cubes. Season with salt only and refrigerate until ready to serve.

  2. 2

In a saucepan, sauté the sliced onion and minced garlic in a drizzle of olive oil until golden and fragrant.

  3. 3

Pour in the red wine and add the beef bouillon cubes. Stir and bring to a boil.

  4. 4

Once boiling, carefully transfer the broth to the fondue pot set over its burner. Keep the liquid at a steady simmer throughout the meal.

  5. 5

Skewer the beef cubes on fondue forks and cook them in the hot broth for 1 to 3 minutes depending on desired doneness.

  6. 6

Serve with sliced crusty bread and a selection of sauces such as aioli, whole grain mustard, or horseradish sauce.

💡 Chef's Tip

Add a bouquet garni (thyme, bay leaf, parsley) and a few peppercorns to the broth for extra depth. Use a wine you would enjoy drinking — its quality directly affects the flavor of the broth.
