🛒 Ingredients

12 servings

12
  • 6 starchy potatoes
  • 200 ml thick cream or sour cream
  • 100 g grated Parmesan
  • 100 g shoestring potato chips
  • 200 g cream cheese (Philadelphia-style)
  • 1 can sweet corn, drained (200 g)
  • 1 can mixed spring vegetables, drained — peas, carrots, beans (200 g)
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 2 ripe tomatoes, diced
  • 300 g smoked sausage, finely sliced
  • 4 tablespoons olive oil
  • 2 smoked meat stock cubes
  • Salt and freshly ground black pepper

Directions

  1. 1

Peel the potatoes and cook in a large pot of salted water until very tender.

  2. 2

Drain and mash until completely smooth and lump-free.

  3. 3

Return the mash to the pot over low heat. Stir in the cream, drained vegetables and half the Parmesan. Season, mix until creamy and uniform. Set aside, keeping warm.

  4. 4

In a large skillet, heat the olive oil over medium heat. Sauté the onion and garlic until golden and translucent.

  5. 5

Add the sliced smoked sausage and cook for 3–4 minutes until lightly browned.

  6. 6

Stir in the corn, diced tomatoes and crumbled stock cubes. Mix well.

  7. 7

Cover and simmer on low heat for 6–8 minutes, until the tomatoes break down and the flavours meld together.

  8. 8

Spoon the mashed potatoes into deep plates, top generously with the sausage fricassee, scatter the remaining Parmesan and finish with potato chips for crunch. Serve immediately.

💡 Chef's Tip

Stir the cream cheese directly into the hot mash just before plating for an extra-silky texture. Swap the chips for golden croutons fried in olive oil for a rustic touch.
