🛒 Ingredients

4 servings

4
  • 1 kg floury potatoes for frying (or 2 bags frozen fries)
  • 200 g smoked chorizo, diced
  • 200 g smoked bacon lardons
  • 150 g cream cheese
  • 100 g grated gruyère or emmental
  • 150 g mozzarella or mild melting cheese, roughly chopped
  • 4 tablespoons whole milk
  • Fresh flat-leaf parsley and chives, to taste
  • Fine salt, to taste

Directions

  1. 1

Fry the potatoes in hot oil until deeply golden and crispy all over. Drain thoroughly on kitchen paper, then spread them in a large serving dish.

  2. 2

Season lightly with salt straight away while they're still hot.

  3. 3

In a dry skillet over medium heat, cook the chorizo and bacon until golden and slightly crispy. Drain on kitchen paper and set aside.

  4. 4

In a small saucepan over low heat, combine the cream cheese, grated cheese, mozzarella and milk. Stir continuously with a spatula until everything has melted into a smooth, lump-free sauce.

  5. 5

Pour the warm cheese sauce generously all over the fries, covering as much surface as possible.

  6. 6

Scatter the chorizo and bacon on top, then finish with a handful of freshly chopped parsley and chives. Serve immediately.

💡 Chef's Tip

Cut your cheeses into small chunks before melting — they'll blend into a smoother sauce faster. For extra depth, add a pinch of smoked paprika or a dash of Worcestershire sauce to the cheese mixture.
