🛒 Ingredients

4 servings

4
  • 3 eggs (whites and yolks separated)
  • 3 tablespoons butter or margarine
  • 1 cup milk
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 4 ripe bananas
  • For the crumble:
  • 1½ cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons butter or margarine

Directions

  1. 1

Preheat oven to 350°F (180°C). Make the crumble first: combine flour, sugar and cinnamon in a bowl, add butter and rub with your fingertips until sandy and crumbly. Set aside.

  2. 2

Slice the bananas into rounds or strips and set aside.

  3. 3

In a large bowl, beat butter and sugar together until light and creamy. Add egg yolks one at a time, mixing well after each addition.

  4. 4

Stir in the milk, flour, baking powder and vanilla extract until a smooth batter forms.

  5. 5

Whip egg whites to stiff peaks and gently fold them into the batter using a spatula, preserving as much air as possible.

  6. 6

Grease a baking pan, pour in the batter and arrange banana slices in an even layer on top.

  7. 7

Sprinkle the cinnamon crumble evenly over the bananas and bake for about 30 minutes, until a toothpick inserted in the centre comes out clean.

💡 Chef's Tip

Prepare the crumble and slice the bananas before starting the batter — assembly goes much faster. Very ripe bananas deliver the best flavour and natural sweetness.
