6 servings

6
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups granulated sugar
  • 1/2 cup warm water
  • 3 tablespoons unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons butter
  • 2 cans sweetened condensed milk
  • 8 tablespoons milk powder
  • 1 tablespoon butter
  • 1 can sweetened condensed milk
  • 2 tablespoons cocoa powder
  • 1 carton heavy cream
  • 1 cup chopped dark chocolate

Directions

  1. 1

In a stand mixer, beat the eggs, oil and sugar until smooth.

  2. 2

Pour in the warm water and beat again briefly.

  3. 3

Add the cocoa powder, flour and baking powder.

  4. 4

Whisk gently just until the batter comes together.

  5. 5

Pour into a buttered, floured pan and bake for about 30 minutes in a preheated oven at 180 °C (350 °F).

  6. 6

In a saucepan, melt the butter with the condensed milk and milk powder.

  7. 7

Stir until thick like brigadeiro, then let it cool.

  8. 8

In another saucepan, combine the butter, condensed milk and cocoa powder.

  9. 9

    Cook, stirring, until slightly thickened.

  10. 10

Off the heat, stir in the heavy cream and chopped dark chocolate.

💡 Chef's Tip

For a bakery-style look, level the cake and poke small holes before spreading the milk cream so it soaks in. Let the ganache cool until it is pourable but not hot, otherwise it will slide off. The cake keeps up to 3 days in the fridge — bring it to room temperature before serving.
