  • 4 eggs, separated
  • 2 cups granulated sugar
  • 2 cups all-purpose flour, sifted
  • 1 cup whole milk, boiling hot
  • 1 tablespoon baking powder
  • 1 teaspoon unsalted butter
  • 1 can (14 oz) sweetened condensed milk
  • ¾ cup coconut milk
  • ¾ cup whole milk
  • Shredded coconut for garnish

    Preheat oven to 350 °F (180 °C). Grease and flour a rectangular baking pan.

    Using an electric mixer, beat egg whites to very stiff peaks.

    Add the egg yolks to the beaten whites and mix gently to combine.

    Gradually add the sugar and continue beating until the mixture is pale and fluffy.

    Fold in the sifted flour and baking powder with a spatula, using gentle folding motions to keep the batter light.
