  • 4 cups all-purpose flour (about 480 g)
  • 2 cups granulated sugar (about 400 g)
  • 2 tablespoons softened butter
  • 4 large eggs
  • 1½ cups whole milk (375 ml)
  • 1 tablespoon baking powder
  • 4 to 5 very ripe bananas, sliced lengthwise
  • Neutral oil for greasing the pan
  • For the crumble: 1 cup flour (120 g), 1 cup sugar (200 g), 2 tablespoons cold butter, diced
  • For the caramel (optional): 1 cup granulated sugar (200 g)

Directions

    Preheat oven to 350 °F (180 °C). Grease a 13 × 9 inch (30 × 20 cm) baking pan with neutral oil.

    In a large bowl or stand mixer, beat the sugar, eggs, and softened butter together for about 3 minutes until pale and creamy.

    Add the flour and baking powder in three additions, alternating with the milk. Mix until you get a smooth, lump-free batter.

    Pour the batter into the prepared pan and bake for 15 minutes.

    While the cake bakes, make the crumble: rub together the flour, sugar, and cold butter with your fingertips until coarse sandy crumbs form.

    Remove the cake from the oven, arrange banana slices evenly over the surface, then scatter the crumble generously on top.
