20 servings

20
  • 2 eggs
  • 8 tablespoons sugar
  • 2 tablespoons margarine (or softened butter)
  • 2 tablespoons active dry yeast
  • 270 g (2 cups) all-purpose flour
  • 220 ml (1 cup) warm milk
  • 1 pinch of salt
  • 450 g guava paste, sliced
  • Crumble: 6 tablespoons sugar
  • Crumble: 6 tablespoons all-purpose flour
  • Crumble: 4 tablespoons cold margarine
  • 1 teaspoon vanilla sugar (optional)

Directions

  1. 1

In a large bowl, whisk the eggs with the sugar and salt until the mixture is light, frothy, and slightly pale.

  2. 2

Add the softened margarine and continue whisking until fully incorporated and the batter is completely smooth.

  3. 3

Gradually add the sifted flour, active dry yeast, and warm milk, stirring vigorously until the batter is lump-free and homogeneous.

  4. 4

Grease and flour a rectangular baking pan, pour in the batter, and arrange the guava paste slices evenly over the surface.

  5. 5

Make the crumble: rub the sugar, flour, and cold margarine together with your fingertips until you get a coarse, sandy texture. Stir in vanilla sugar if using.

  6. 6

Sprinkle the crumble generously over the guava slices and let the dough rest 30 minutes at room temperature for the yeast to activate.

  7. 7

Preheat the oven to 200 °C (390 °F) for 15 minutes. Bake for 25 to 30 minutes until the crumble is golden brown and a skewer inserted in the center comes out clean.

💡 Chef's Tip

Always use warm — not hot — milk to activate the yeast properly without killing it. For an extra tropical twist, add shredded coconut to the crumble. The cake keeps well for 2–3 days stored under a cake dome at room temperature.
