12 servings

  • 6 ripe bananas
  • 1½ cups all-purpose flour (for the crumble)
  • 1 cup sugar (for the crumble)
  • 1 tbsp ground cinnamon
  • 3 tbsp unsalted butter, melted (for the crumble)
  • 3 tbsp unsalted butter, softened (for the batter)
  • 2 cups sugar (for the batter)
  • 4 eggs
  • 2 cups all-purpose flour (for the batter)
  • 1 cup cornstarch
  • 1 tbsp baking powder
  • ¾ cup whole milk
  • Butter and flour for the pan

Directions

  1. 1

Preheat oven to 350°F (180°C). Grease and flour a 9-inch (22 cm) springform pan.

  2. 2

Make the crumble: combine flour, sugar, and cinnamon in a bowl. Add melted butter and rub with your fingertips until the mixture resembles coarse sand. Refrigerate until needed.

  3. 3

Peel the bananas and slice into ½-inch rounds. Set aside.

  4. 4

In a large bowl, beat softened butter with sugar for 3–4 minutes until light and fluffy.

  5. 5

Add eggs one at a time, beating well after each addition.

  6. 6

Sift flour and cornstarch together in a separate bowl.

  7. 7

Fold the flour mixture into the batter in three batches, alternating with milk, beginning and ending with the flour.

  8. 8

Gently stir in the baking powder with a spatula, being careful not to overmix.

  9. 9

Pour the batter into the prepared pan and smooth the surface.

  10. 10

Arrange banana slices in an even layer over the top of the batter.

  11. 11

Evenly sprinkle the cinnamon crumble over the bananas, covering completely.

  12. 12

Bake for 45–50 minutes, or until a skewer inserted into the center comes out clean.

  13. 13

Rest for 15 minutes before releasing the springform. Serve warm or at room temperature.

💡 Chef's Tip

Use very ripe bananas — the blacker the peel, the sweeter and more fragrant the result. The crumble can be prepared a day ahead and kept in the fridge, which also helps it stay crunchier after baking.
