Creamy Corn Cake with Coconut

- ¾ cup (200 ml) of neutral vegetable oil
- ¾ cup (200 g) of granulated sugar
- ¾ cup (200 g) of fine cornmeal
- 4 eggs
- 2 tablespoons of all-purpose flour
- 2 tablespoons of shredded coconut
- 1½ teaspoons of baking powder

Preheat oven to 350 °F (180 °C). Grease and flour an 8 x 8 inch (20 x 20 cm) baking pan.

In a blender, combine the drained corn, oil, sugar, cornmeal, eggs, and flour. Blend for 2–3 minutes until the batter is smooth and creamy.

Add the shredded coconut and baking powder, then blend briefly for a few more seconds to combine.

Pour the batter into the prepared pan and bake for 40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean. Allow to cool before slicing.
