🛒 Ingredients

12 servings

12
  • 2 cans sweet corn kernels (drained)
  • 1½ cans sweetened condensed milk
  • 3 eggs
  • Juice of 1 lime
  • 4 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 100 g grated cheese (mild cheddar or mozzarella)
  • 50 g desiccated coconut
  • 1 small can coconut milk (200 ml)
  • 2 tablespoons melted unsalted butter

Directions

  1. 1

Preheat your oven to 350 °F (180 °C). Grease a 9-inch round cake pan generously with butter.

  2. 2

Add the corn, condensed milk, eggs, lime juice, flour, grated cheese, desiccated coconut, coconut milk and melted butter to a blender. Blend on high for about 2 minutes until completely smooth.

  3. 3

Add the baking powder and blend for a further 20 seconds just to combine.

  4. 4

Pour the batter into the prepared pan. Gently tap the pan on the counter to release any air bubbles.

  5. 5

Bake for 40 to 50 minutes until the top is deep golden brown and a toothpick inserted in the center comes out clean.

  6. 6

Allow to cool in the pan for 15 minutes before unmoulding. Serve warm or at room temperature.

💡 Chef's Tip

For an even creamier, custard-like texture, refrigerate the cake overnight — it firms up beautifully. Sprinkle toasted coconut flakes on top before baking for an extra layer of flavor and crunch.
